One of the fun things about relocating is revisiting favorite places before we're gone. Or visiting places we've always wanted to try. Cowboy Ciao in Old Scottsdale has been on such a list! It has an eclectic American menu with southwest and global influences (that according to their website).

I had the Stetson chopped salad.....and was delighted to find the recipe archived in the newspaper. What in the world did we do before the internet? I was delighted!
So here is the Stetson chopped salad.....you will do cartwheels. It is absolutely AMAZING! Not to mention fresh and healthy, too!
The fun thing is to mix it after it is constructed...how beautiful!
Israeli cous cous, smoked salmon, arugula, dried corn, roma tomatoes, pepitas, black currants and asiago cheese...
The dressing is a simple buttermilk basil pesto mixture....wonderful flavor.
