“Soup is cuisine's kindest course.
It breathes reassurance; it steams consolation;
after a weary day it promotes sociability."
Louis P. De Gouy, ‘The Soup Book’ (1949)
David would have eaten all of tonight's dinner from the pot if I had let him!!!
Nothing says "welcome fall" like a pot of soup.
And after a busy day, nothing welcomes a family to the table like a pot of soup either!
I love to make soup.
Fresh aromtic herbs.
Bright, crisp vegetables.
Flavorful spices.
Hearty meats.
Tasty whole grains and legumes.
In the last week alone (since it cooled off finally) we have made:
Minnesota Wild Rice Soup
Spicy Black Bean Chili
and
Mushroom, Beef and Barley Soup
YUMMMMMMY!
Soup is a lot like a family.
Each ingredient enhances the others;
each batch has its own characteristics;
and it needs time to simmer to reach full flavor.

Of course, with a piping hot bowl of soup it's best to have a piece of fresh baked whole grain bread.
Mine is about ready to go in the oven!!!
Can't wait for dinner!!!
